Butternut Squash Fries

Ingredients

  • 1 medium butternut squash, about 2 to 2 1/2 pounds  
  • 2 tablespoons olive oil 
  • 2 teaspoons smoked paprika 
  • 1 teaspoon salt 
  • 1 teaspoon garlic powder 
  • 1 teaspoon onion powder 
  • 1/2 teaspoons coarse black pepper 
  • 2 tablespoons chopped fresh parsley, for garnish

Directions

    1. Use a large sharp knife and cutting board. Cut off top of squash. Cut about 1/2-inch off bottom of squash to create a flat surface. Stand squash up and peel from top to bottom.  
    2. Cut across just above where squash flairs out; then cut both pieces in half lengthwise. 
    3. Scoop out seeds and stringy flesh from bottom sections of squash. Discard. 
    4. To create fries, slice top half lengthwise into ¼-inch thick slices. Lay slices flat on cutting board and slice into 1/4-inch thick sticks. Repeat with bottom portions.  
    5. In a large bowl, combine olive oil, smoked paprika, salt, garlic powder, onion powder, and black pepper. Add squash fries and gently toss to coat.  
    6. Place in basket of air fryer in a single layer. Set air fryer to 400°F and cook for 20 to 25 minutes, tossing fries every 5 minutes.  Repeat with remaining fries. 
    7. Serve immediately garnished with parsley. 

    Serves: 4

    TEST KITCHEN TIP: 

    • These fries will not get as crispy as potato fries.
