Ingredients

  • Pizza Dough
  • Pizza Sauce
  • Sliced Spanish-style chorizo
  • Sliced fennel
  • Sliced red, yellow, and green bell peppers
  • Shredded Monterey Jack cheese
  • Shredded sharp Cheddar cheese
  • Chopped cilantro

Directions

  1. Place pizza stone on bottom rack of oven. Heat oven to 500°F.
  2. Flour a pizza peel and shape pizza dough into a personal size pizza on peel.
  3. Spread 2 to 3 tablespoons pizza sauce thinly over pizza dough. Arrange chorizo slices, fennel slices, and sliced bell peppers over sauce. Sprinkle with Monterey Jack and Cheddar cheeses. Bake for 8 to 10 minutes or until crust is browned and cheese is melted. Sprinkle with chopped cilantro.

Serves: 1 large pizza or 2 personal-size pizzas

Test Kitchen Tip:

The fastest way to slice toppings and shred cheese is using a food processor. Just reverse the disc to slice with one side or shred with the other.
Sliced onions can be substituted for fennel, pepperoni could be substituted for chorizo.
Too much sauce will make the crust soggy, and the ingredients will slide off. To evenly spread a thin layer of sauce on the pizza dough, an offset spatula is a handy tool.
