Churro Waffles with Mexican Chocolate Sauce

Ingredients

Cinnamon Sugar:

  • 1 cup granulated sugar 
  • 1 tablespoon ground cinnamon 

Mexican Chocolate Sauce:

  • 3/4 cup bittersweet (60%) chocolate chips  
  • 3/4 cup heavy cream 
  • 1 teaspoon ground cinnamon 
  • 1/2 teaspoon ancho chili powder 
  • 1/4 teaspoon cayenne pepper 

Waffles: 

  • 1 3/4 cups all-purpose flour 
  • 2 tablespoons granulated sugar 
  • 2 teaspoons baking powder 
  • 1 teaspoon baking soda 
  • 1/2 teaspoon ground cinnamon 
  • 1/2 teaspoon salt 
  • 1 3/4 cups buttermilk 
  • 2 large eggs 
  • 6 tablespoons butter, melted 
  • 1 teaspoon pure vanilla extract 

Directions

Cinnamon Sugar: 

In a large bowl, whisk together sugar and cinnamon. Set aside. 

 

Mexican Chocolate Sauce: 

  1. In a microwave-safe bowl, microwave cream until simmering, about 1 minute. 
  2. Add cinnamon, ancho chili powder, and cayenne pepper to cream and whisk to combine. Add chocolate and let stand for 5 minutes without stirring. 
  3. Whisk cream/chocolate mixture until smooth. Set aside. 

 

Waffles: 

  1. Preheat waffle maker. Preheat oven to 200°F. 
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt. 
  3. In a medium bowl, whisk buttermilk, eggs, butter, and vanilla extract until well blended. 
  4. Gradually pour milk mixture into flour mixture, stir until almost combined. Batter will have some small lumps and will be thick. 
  5. Pour batter onto waffle maker and cook until desired doneness.  
  6. Immediately brush with melted butter and dredge in cinnamon sugar mixture. 
  7. Place waffle on a cookie sheet and keep warm in oven. Repeat with remaining batter.  
  8. Serve drizzled with Mexican Chocolate Sauce. 

 

Makes: Four (6-inch) round waffles 

Test Kitchen Tips

  • For Petite Waffle Maker: Pour ¼ cup batter onto waffle maker and cook for 3 minutes or until desired doneness. Makes 8 to 9 Petite Waffles 
  • If necessary, reheat Mexican Chocolate Sauce in microwave in 10 second intervals until  
  • Waffles may be made ahead of time and frozen. Omit Waffle Steps 7 and 8. Cool completely before placing in a resealable plastic bag to freeze. Reheat on a parchment-lined baking sheet in a 350° oven for 10 to 12 minutes, or until heated through. Continue with Waffle Steps 7 and 9.
