Fried Egg, Prosciutto, and Avocado Toast

  • 1 small avocado, peeled and pitted
  • 2 slices prosciutto
  • 2 large eggs
  • 2 slices (½ to ¾-inch thick) artisan bread, toasted
  • 1 teaspoon minced red bell pepper
  • Coarse black pepper
  • Kosher salt


  1. In a small bowl, mash avocado. Set aside.
  2. In a medium skillet over medium heat, cook prosciutto for 1 minute, turning once. Remove to a plate.
  3. In same skillet, cook eggs to desired doneness.
  4. Place 1 slice toast on a plate, spread with half of the mashed avocado. Top with 1 slice prosciutto and 1 fried egg. Repeat with remaining mashed avocado, prosciutto, and egg.
  5. Sprinkle each with red bell pepper, black pepper, and salt.

Serves: 2
