Green Sauce for Roasted Peruvian Chicken

  • 1 1/2 cups packed cilantro leaves 
  • 2 green onions, cut into 2-inch pieces (green and white part) 
  • 1 jalapeno, trimmed 
  • 1 clove garlic 
  • 2 tablespoons lime juice 
  • 1 tablespoon olive oil 
  • 3/4 cup mayonnaise 


  1. In a food processor, add cilantro, green onion, jalapeno, garlic, lime juice, and olive oil. Pulse until mixture is finely chopped. Add mayonnaise and pulse until well blended.  
  2. Pour into a serving bowl. Cover and refrigerate until ready to serve. 

Serves: 4-5
