Mediterranean Grain Bowl

  • 3 cups water 
  • 1 cup pearled or semi pearled farro, rinsed 
  • 1/2 teaspoon salt 


  • 1 cup grape tomatoes, halved 
  • 1 cup diced English cucumbers 
  • 1 cup drained canned chickpeas,  
  • 1 cup cooked diced chicken breast (omit for vegetarian) 
  • 1/2 cup crumbled feta cheese 
  • 1/4 cup Hummus 
  • 1/4 cup pickled onions 
  • 1/4 cup Spicy Feta Dip
  • 2 tablespoons pumpkin seeds 
  • Pita bread, for serving


  1. Add water, farro and salt to cooking pot. 
  2. Place lid on pressure cooker, turn lid to lock, and move steam release valve to closed position. Press PRESSURE COOK mode and adjust cooking time for 7 minutes.  
  3. When cooking has finished, release pressure using quick release. 
  4. Drain any excess liquid. Divide farro between two bowls. Top each bowl with half of remaining ingredients.  
  5. Serve with pita bread. 

Serves: 2

Test Kitchen Tip:
This grain bowl can be made with any grain of your choice such as quinoa, pearl barley, rice, bulgur, etc.
