Grilled Steak and Shrimp Fajitas

Seasoning Mix:

  • 1 tablespoon ancho chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon dried crushed red pepper


  • 4 cloves garlic
  • 2/3 cup olive oil
  • ½ cup fresh lime juice
  • 2 pounds sirloin steak, sliced thin
  • 1 pound peeled medium raw shrimp
  • 2 tablespoons olive oil
  • 1 large red onion, cut in thin wedges
  • 1 medium green bell pepper, cut in strips
  • 1 medium yellow bell pepper, cut in strips
  • Flour tortillas

Toppings: chopped cilantro, guacamole, salsa, sour cream


  1. Seasoning Mix: In a small bowl, combine all seasoning mix ingredients.
  2. Marinade: In a large bowl, whisk together garlic, olive oil, and lime juice. Add seasoning mix and whisk to blend.
  3. Pour half of mixture into another large bowl. Add steak to one bowl and shrimp to the other bowl. Cover and let marinade for 30 minutes to 1 hour.
  4. Heat grill to 400°F. Add oil to grill and heat until oil begins to shimmer. Add onion and peppers and cook until crisp-tender, 6 to 7 minutes. Remove to a plate. Drain steak and discard marinade. Add steak to grill. Cook until steak is barely pink in center, 5 to 8 minutes. Remove to a plate. Drain shrimp and discard marinade. Add shrimp to grill and cook until shrimp is opaque. Add steak and vegetables back to grill to warm if necessary.
  5. Serve in warm tortillas with desired toppings.

Serves: 6-8

Steak can be marinated longer than shrimp. Add shrimp to marinade about 30 minutes before you are ready to grill.
